This recipe was created as part of a workshop in the Cacao and Chocolate Summit 2024 by one of the most renounce chocolatiers in Ecuador Santiago Cuevas.

Ingredients:
- 1 melon
- Natural Cacao Butter (100g)
- Macambo (500g)
- Brown sugar (500g)
- Tarragon (5 to 8 small bundles)
- Natural Greek Yogurt
- Key Lime (300g)
- MANABI 70% COUVERTURE CHOCOLATE DISCS (1kg)
- Corn Starch (200g)
- Milk (1lt)
- White Sugar (500g)
- 10 Eggs
- Goat Cheese (200g)
- Heavy Whipping Cream (1lt)
